  • ½ cup Fresh lime juice
  • ¼ cup Fresh orange juice
  • 6 cloves Garlic, minced
  • 2 teaspoons Dried oregano
  • ¼ cup Olive oil
  • 2 cups cooked Pearl couscous
  • 1.5 cups Vegetable or chicken broth
  • ½ cup Capers, drained
  • 2 cups Olive oil for frying capers
  • 1 teaspoon Sea salt
  • ½ teaspoon Black pepper
  • ¼ cup Fresh cilantro, chopped (optional garnish)
  • 1 lime, cut into wedges for serving

Instructions

  1. Combine lime juice, orange juice, garlic, oregano, olive oil, salt, and pepper in a large bowl. Reserve one-quarter of the marinade for sauce. Add shrimp to the remaining marinade and refrigerate for 15 minutes.
  2. Bring broth to a boil. Add pearl couscous, return to a simmer, cover, and cook on low for 10 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  3. Heat 2 cups neutral oil to 375°F. Pat capers completely dry. Fry for 2-3 minutes until golden and crispy. Drain on paper towels and season with sea salt.
  4. Heat 2 tablespoons olive oil in a large skillet over high heat. Remove shrimp from marinade and sear in a single layer for 2 minutes. Flip and cook 1-2 minutes until opaque and pink. Warm reserved marinade in the skillet for 30 seconds.
  5. Divide couscous among bowls. Top with shrimp, drizzle with warm mojo sauce, and garnish with fried capers, cilantro, and lime wedges.

Notes

Pat shrimp dry before searing to get a good crust. Ensure capers are very dry before frying to prevent splattering. For gluten-free, substitute couscous with rice or quinoa.
