Ingredients
- 12 oz Spaghetti (preferably bronze-cut)
- 2 cups Cherry Tomatoes (halved)
- 4 cloves Garlic (thinly sliced or minced)
- 4 cups Vegetable Broth (low-sodium)
- 1/2 cup Fresh Basil
- 2 tbsp Olive Oil (extra virgin preferred)
- Sea salt (to taste)
- Red pepper flakes (to taste)
- Extra parmesan cheese (optional)
Instructions
- Place dry spaghetti, halved cherry tomatoes, and sliced garlic into a large, deep skillet or wide pot.
- Add olive oil, sea salt, and red pepper flakes over the pasta mixture, then pour vegetable broth over the ingredients.
- Bring liquid to a rolling boil over medium-high heat while stirring occasionally to prevent sticking.
- Reduce heat to a steady simmer and cook for approximately 10 to 12 minutes, stirring frequently to help starches release.
- Remove pan from heat once liquid has reduced to a thick, glossy sauce.
- Stir in fresh basil leaves and extra parmesan if desired, then serve immediately.
Notes
Use a wide skillet to ensure even cooking. Stir frequently during simmering to help starches release into the broth for a thick sauce. Monitor liquid levels during the final minutes and add a splash of water if needed. Reheat leftovers on the stovetop with a splash of water to revive sauce texture.
