Ingredients
- 16 oz Imitation Crab (flake style)
- 1/2 cup Mayonnaise (preferably Japanese Kewpie)
- 2 stalks Celery (finely diced)
- 1 tbsp Lemon Juice (freshly squeezed)
- 1 tbsp Fresh Dill
- 1/2 tsp Black Pepper (freshly ground)
- 1/4 cup Red Onion (finely diced)
Instructions
- Shred the imitation crab into thin strands using your fingers or a fork, and place into a large mixing bowl.
- Whisk the mayonnaise, fresh lemon juice, lemon zest, and black pepper together in a small bowl until completely smooth, then stir in the fresh dill.
- Gently fold the dressing into the shredded crab until evenly coated, avoiding heavy pressure to keep the texture fluffy.
- Add the finely diced celery and red onion, stirring once more to distribute the crunch.
- Refrigerate the salad for at least thirty minutes before serving to allow the flavors to meld perfectly.
Notes
Always use high-quality, chilled surimi to ensure the individual strands hold their shape without becoming mushy. Dice your celery and onions into very small, uniform pieces so they provide an even crunch. Adjust the acidity by adding a small amount of extra lemon juice, or add a pinch of cayenne pepper for mild heat. Avoid over-mixing to prevent the crab strands from breaking down.
