Instructions

  1. Wash the carrots thoroughly under cool running water to remove any dirt or debris before shredding.
  2. Shred the carrots using a box grater or food processor fitted with the shredding disc until you have approximately four cups of shredded carrots.
  3. Place the shredded carrots and finely diced red onion in a large mixing bowl.
  4. Juice the limes until you have three tablespoons of fresh lime juice, then pour into a small bowl and whisk in the extra virgin olive oil, ground cumin, sea salt, and freshly ground black pepper vigorously for one minute.
  5. Chop the fresh cilantro finely and add it to the bowl containing the carrots and red onion.
