Ingredients
Scale
- 2 cups sweetened shredded coconut, finely shredded
- 1 can (14oz) sweetened condensed milk
- 1 tbsp unsalted butter
- 2 cups granulated sugar
- 1 cup water
- 1 tbsp white vinegar
Instructions
- Combine condensed milk, shredded coconut, and butter in a non-stick saucepan over medium heat.
- Stir the mixture constantly until it thickens and pulls away clearly from the bottom of the pan.
- Remove from heat, allow to cool completely, then roll small portions into uniform balls and place on a parchment-lined tray.
- Mix sugar, water, and vinegar in a clean saucepan, then heat over medium without stirring until it reaches 300°F (hard-crack stage).
- Dip each coconut ball quickly into the hot syrup using a toothpick or fork to coat evenly.
- Place coated candies onto a silicone mat or lightly greased surface to harden completely.
Notes
Use a digital candy thermometer to ensure the sugar syrup reaches exactly 300°F for that perfect crunch. Chill coconut balls in the refrigerator for 30 minutes before dipping. Keep syrup warm and work quickly while dipping to prevent a clumpy coating.
