Instructions
- Heat olive oil in a small saucepan over medium-low heat until it just begins to shimmer but never smokes.
- Add thinly sliced garlic cloves and toast for 2 to 3 minutes, stirring constantly, until golden but not brown.
- Add dried red chilies whole to the hot oil and allow them to steep for 3 to 4 minutes, infusing the oil with deep chili flavor.
- Stir in red pepper flakes and remove the pan from heat immediately to prevent burning.
- Let the salsa macha oil cool for 5 minutes before using.
- Bring a large pot of salted water to a rolling boil while you prepare the salsa macha oil.
- Add dried pasta to boiling water and cook for 1 minute less than package directions to achieve al dente texture.
- Reserve 1 cup of pasta water before draining; do not rinse the pasta.
- Heat 2 tablespoons of your prepared salsa macha oil in a large skillet over medium-high heat.
- Pat shrimp dry with paper towels to ensure proper searing and browning, and season generously with sea salt on both sides.
- Add shrimp to the hot skillet in a single layer and cook for 1 minute without moving them.
- Flip each shrimp and cook the second side for exactly 1 minute until they curl and turn pink throughout.
- Transfer cooked shrimp to a plate immediately to prevent overcooking.
- Add cooked pasta to the same skillet where shrimp rested, leaving any collected juices in the pan.
- Pour remaining salsa macha oil over pasta and toss gently for 1 to 2 minutes.
- Add 1/4 cup reserved pasta water and toss again, allowing the starch to create a silky coating.
- Return shrimp to the skillet and fold gently to combine all elements.
- Squeeze fresh lime juice over the entire dish and taste for seasoning.
- Divide salsa macha pasta with shrimp recipe among four bowls and garnish generously with fresh cilantro.
Notes
Toast your dried chilies in the warm oil for exactly the right duration. Dry your shrimp thoroughly before searing to achieve proper browning and texture. Do not skip the pasta water; it is essential for sauce success. Add lime juice at the very end of cooking.
