Ingredients
- 1 (4-5 pounds) Whole chicken
- 3 medium Fennel bulbs
- 4–5 medium Fresh peaches
- 4 tablespoons Olive oil
- 6 cloves Garlic cloves
- 4 sprigs Fresh thyme
- 6 leaves Fresh sage leaves
- 1 Lemon
- 1.5 teaspoons Sea salt
- 1 teaspoon Black pepper
- 1 cup Vegetable or chicken broth
Instructions
- Remove the chicken from refrigeration thirty minutes before cooking to bring it to room temperature.
- Pat the whole chicken dry using clean paper towels, rubbing inside and outside the cavity to remove excess moisture.
- Trim the fennel bulbs by cutting away the tops and root ends, then slice each bulb vertically into four wedges, keeping the base intact for structural integrity.
- Halve the peaches, remove the pits, and cut each half into three pieces for even cooking and attractive presentation.
- Peel the garlic cloves and leave them whole to infuse the pan with subtle flavor without overpowering the dish.
- Zest the lemon directly into a small bowl, then cut the lemon in half and set aside for cavity seasoning.
- Season the inside cavity of the chicken generously with sea salt, black pepper, and fresh thyme and sage sprigs, then insert the lemon halves into the cavity.
- Rub the entire exterior of the chicken with two tablespoons of olive oil, working the oil under the skin where possible to promote even browning and crispy skin.
- Season the outside of the roasted chicken extensively with sea salt and freshly ground black pepper.
- Arrange the fennel wedges and garlic cloves on the bottom of a large roasting pan in a single, even layer to create a flavor base.
- Place the chicken breast-side up directly on the fennel and garlic bed, allowing the vegetables to support and season the meat from underneath.
- Preheat your oven to 425 degrees Fahrenheit for twenty minutes before placing the chicken inside for optimal initial browning.
- Roast the chicken at 425 degrees for twenty minutes to develop a golden brown exterior, then reduce the oven temperature to 375 degrees.
- Continue roasting for an additional twenty to twenty-five minutes at the lower temperature, allowing the chicken to cook through without excessive browning.
- Remove the pan from the oven and carefully arrange the peach pieces and remaining fresh thyme around the chicken, avoiding direct contact with the hottest parts of the pan.
- Drizzle the peaches and remaining exposed fennel with the remaining two tablespoons of olive oil and a pinch of sea salt to encourage caramelization.
- Roast for an additional ten to fifteen minutes until the peaches soften slightly and develop light caramelization on their cut surfaces.
- Insert an instant-read thermometer into the thickest part of the thigh without touching bone; the internal temperature should read 165 degrees Fahrenheit.
- Remove the roasting pan from the oven and transfer the chicken to a cutting board to rest for ten minutes, which allows juices to redistribute throughout the meat.
- Carefully pour the broth into the roasting pan around the vegetables and fruit, scraping the bottom with a wooden spoon to release caramelized bits that create sauce.
- Arrange the fennel wedges, peaches, and garlic on a serving platter alongside the carved chicken.
- Pour the pan sauce into a small serving bowl or directly over the chicken, garnishing with fresh lemon zest and additional fresh thyme for visual appeal and bright flavor.
Notes
Chef Tips: Bring chicken to room temperature 30 minutes before cooking to ensure even heat penetration. Use proper thermometer technique by inserting it into the thickest part of the thigh without touching bone. Rest the meat for ten minutes after roasting to redistribute internal juices. Start hot at 425 degrees and finish moderate at 375 degrees for perfectly crispy skin. Add peaches during the last fifteen minutes of roasting to prevent them from disintegrating. Don’t skip the pan sauce; deglazing the roasting pan captures the best caramelized flavor bits.
