Instructions
- Season chicken breasts generously with salt, pepper, and dried oregano.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear chicken for 5 minutes per side until it turns golden brown, then remove chicken from the skillet to a plate.
- Sauté halved cherry tomatoes and minced garlic in the same pan for 3 minutes.
- Nestle the chicken back into the skillet among the blistered tomatoes and top each piece of chicken with fresh mozzarella slices or pearls.
- Cover the skillet with a lid to melt the cheese until perfectly gooey.
- Drizzle the top with balsamic glaze and fresh basil before serving.
Notes
Pound the chicken breasts to an even thickness to guarantee uniform cooking. Use room temperature mozzarella so that it melts more quickly and evenly. Always add fresh basil at the very last moment to prevent wilting. Monitor the internal temperature of the chicken to ensure it reaches 165 degrees Fahrenheit for food safety.
