This Lemon Ricotta Pasta Bake Recipe delivers a zesty, creamy, and comforting meal that brings restaurant-quality flavors directly to your home kitchen by combining fresh ricotta cheese, bright lemon zest, and al dente pasta.

  • Total Time: 40 mins
  • Yield: 6 servings 1x

Ingredients

Scale
  • 16 oz Pasta (Penne or Ziti)
  • 15 oz Whole Milk Ricotta
  • 2 tbsp Lemon Zest
  • 2 cups Mozzarella Cheese
  • 1/2 cup Parmesan Cheese
  • 3 cloves Garlic (minced finely)
  • 1/4 cup Fresh Herbs (parsley or basil)

Instructions

  1. Boil a large pot of salted water.
  2. Add your chosen pasta to the boiling water.
  3. Cook pasta until it is just shy of al dente.
  4. Drain the pasta while reserving one cup of the starchy cooking water.
  5. Combine the ricotta, lemon zest, garlic, and half of the parmesan in a large mixing bowl.
  6. Stir the reserved pasta water into the ricotta mixture to loosen the consistency.
  7. Fold the cooked pasta into the ricotta mixture until every piece is coated.
  8. Season the mixture with salt and black pepper to taste.
  9. Transfer the coated pasta into a prepared baking dish.
  10. Sprinkle the mozzarella and remaining parmesan over the top of the dish.
  11. Bake the Lemon Ricotta Pasta Bake Recipe in a preheated oven at 375 degrees Fahrenheit.
  12. Remove the dish once the top is golden and bubbling.

Notes

Reserve extra pasta water to maintain texture if the sauce appears too thick before baking. Grate your own mozzarella cheese from a block to avoid the anti-caking agents found in pre-shredded varieties. Use the freshest organic lemons available to get the most aromatic oil from the zest without the bitter white pith. Allow the dish to rest for five minutes after exiting the oven to let the sauce settle and thicken properly.
