- 1 cup fresh berries
- 1/2 cup fresh unsweetened fruit juice

- 2 tablespoons low-fat whipped cream
Instructions
- Gather and measure all ingredients.
- Pour boiling water into a heat-safe bowl.
- Add sugar-free jello powder while stirring continuously until dissolved.
- Add unflavored gelatin and stir until fully incorporated.
- Add cold water and fruit juice, stirring well.
- Allow the mixture to cool at room temperature for 10 minutes.
- Place the mixture in the refrigerator for 45 minutes.
- Check for a semi-set consistency similar to raw egg whites.
- Fold fresh berries gently into the mixture.
- Return to the refrigerator and chill for 3 to 4 hours until fully set.
- Scoop into serving bowls.
- Top with whipped cream and garnish with fresh berries or mint if desired.
Notes
Use sugar-free jello and fresh berries for the best flavor and lowest calorie count. Allow the mixture to set undisturbed for ideal texture and avoid tropical fruits like pineapple which can prevent gelation.
