  • Total Time: 50 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1.5 lbs ground beef (85/15 blend)
  • 1.5 lbs sweet potatoes, cubed
  • 1.5 cups full-fat cottage cheese
  • 1/4 cup raw honey
  • 1/4 to 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes
  • 4 garlic cloves, minced
  • 3 tablespoons extra-virgin olive oil
  • 1.5 teaspoons sea salt
  • 3/4 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh thyme
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh lime juice

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Wash and cube the sweet potatoes into ¾-inch pieces.
  3. Toss the sweet potatoes with 1.5 tablespoons olive oil, smoked paprika, ½ teaspoon salt, and ¼ teaspoon black pepper.
  4. Spread the sweet potatoes on a parchment-lined baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through, until golden and tender.
  6. Heat the remaining olive oil in a large skillet over medium-high heat.
  7. Add the ground beef and cook for 5-7 minutes, breaking it into crumbles until fully browned.
  8. Add the minced garlic and cook for 1 minute until fragrant.
  9. Season the beef with the remaining salt and black pepper.
  10. In a small saucepan, combine honey, butter, fresh thyme, cayenne pepper, and red pepper flakes over low heat.
  11. Stir until the butter melts completely into the honey mixture.
  12. Remove the hot honey from heat and stir in the fresh lime juice.
  13. Divide the roasted sweet potatoes into serving bowls.
  14. Top each bowl with seasoned ground beef and cottage cheese.
  15. Drizzle the warm hot honey over each bowl.
  16. Garnish with additional thyme and red pepper flakes if desired before serving.

Notes

Use full-fat cottage cheese for the creamiest texture and keep it cold until serving for the best contrast with the warm beef and sweet potatoes. Adjust the cayenne pepper gradually to control the heat level.
