- 3 cups sweetened shredded coconut
- 1 can 14 ounces sweetened condensed milk
- 2 cups dark chocolate chips or chopped dark chocolate
Instructions
- Combine the sweetened shredded coconut and sweetened condensed milk in a large mixing bowl.
- Stir until the mixture is completely combined and holds together when squeezed.
- Mix for 2 to 3 minutes until no dry coconut remains visible.
- Line a 9-by-13-inch baking pan with parchment paper.
- Press the coconut mixture firmly and evenly into the prepared pan.
- Refrigerate for at least 30 minutes until firm enough to cut cleanly.
- Remove the pan from the refrigerator.
- Cut the coconut mixture into 12 equal rectangles.
- Lift each bar from the pan and place it on a parchment-lined baking sheet.
- Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
- Dip each coconut bar into the melted chocolate using a fork.
- Coat all sides completely with chocolate.
- Return each coated bar to the parchment-lined baking sheet.
- Let the chocolate coating set at room temperature for 15 minutes.
- Refrigerate for 5 minutes if faster setting is needed.
- Store the finished homemade mounds bars in an airtight container until ready to serve.
Notes
Use finely shredded coconut for the smoothest texture. Chill the coconut mixture thoroughly before cutting so the bars hold their shape. For a smoother chocolate shell, stir 1 tablespoon coconut oil into the melted chocolate if desired.
