Ingredients
- 1 3/4 cups blanched almond flour
- 1/2 cup unsweetened cocoa powder
- 3/4 cup unsweetened shredded coconut
- 2 medium ripe bananas, with brown spots
- 3 large eggs, room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1/4 cup coconut oil, melted
- 1/4 cup pure maple syrup
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon fine sea salt
Instructions
- Preheat the oven to 350°F.
- Position an oven rack in the center of the oven.
- Lightly grease an 8-inch round or square baking pan with coconut oil or non-stick spray.
- Line the bottom of the pan with parchment paper.
- Whisk almond flour, cocoa powder, shredded coconut, baking powder, and sea salt in a large mixing bowl.
- Break up any cocoa powder clumps by whisking for about 30 seconds.
- Set the dry mixture aside.
- Peel and slice the ripe bananas into a medium mixing bowl.
- Mash the bananas thoroughly with a fork until mostly smooth with small chunks remaining.
- Add eggs, vanilla extract, melted coconut oil, and maple syrup to the mashed bananas.
- Whisk the wet ingredients for about 45 seconds until well combined and slightly frothy.
- Pour the wet mixture into the dry ingredients.
- Fold gently with a spatula using about 20 to 25 strokes until just combined.
- Stop folding as soon as no visible dry ingredients remain.
- Pour the batter into the prepared pan.
- Smooth the top gently with a spatula.
- Bake for 32 to 38 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Remove the cake from the oven.
- Let it cool in the pan for 10 minutes.
- Run a thin knife around the edges to loosen the cake.
- Invert the cake onto a wire cooling rack.
- Carefully remove the parchment paper.
- Cool completely at room temperature before slicing, about 1 hour total.
- Slice into 12 pieces and serve.
Notes
Use ripe bananas with brown spots for the best natural sweetness and moisture. Do not overmix the batter, as gentle folding keeps the cake tender. Let the cake cool completely before slicing so the gluten-free crumb sets properly.
