Ingredients
- 2 cans (15 oz each) Canned chickpeas
- 3 tablespoons Harissa paste
- 1.5 cups uncooked Long-grain white rice
- 1 teaspoon Turmeric powder
- 1 medium Yellow onion, diced
- 4 cloves Garlic cloves, minced
- 1 teaspoon Cumin seeds
- 1/2 teaspoon Ground coriander
- 4 cups Vegetable broth (3 cups for rice, 1 cup for chickpeas)
- 3 tablespoons Extra virgin olive oil
- To taste Sea salt
- 1/2 teaspoon Black pepper
- 1/4 cup chopped Fresh cilantro
- 1/4 cup Pomegranate seeds (optional)
Instructions
- Rinse rice under cold water until clear.
- Heat 2 tablespoons olive oil in a saucepan over medium-high heat.
- Toast the rice in the hot oil for 2 minutes, stirring constantly.
- Add 3 cups vegetable broth, turmeric powder, sea salt, and cumin seeds. Bring to a boil, then cover and simmer on low for 18 minutes.
- Remove from heat and let stand covered for 5 minutes.
- While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more.
- Add harissa paste, stirring constantly for 2 minutes to bloom the spices.
- Pour in 1 cup vegetable broth and ground coriander, stirring until smooth.
- Add drained and rinsed chickpeas to the harissa sauce.
- Simmer uncovered for 10 minutes, then season with salt and black pepper to taste.
- Fluff the turmeric rice with a fork and divide among four serving bowls.
- Spoon the harissa chickpeas over the rice and garnish with fresh cilantro and pomegranate seeds.
Notes
Toast your spices individually before adding to deepen their natural oils and flavors. Rinse canned chickpeas thoroughly to remove excess sodium. Bloom the harissa paste in hot oil for 2 minutes before adding liquid to activate its flavors. Never lift the rice lid during cooking to keep the steam sealed inside. Let the rice rest covered for 5 minutes after removing from heat to prevent a mushy texture.
