2 (3-ounce) packets unflavored gelatin
1 1/2 cups pomegranate juice (low sugar)
1 1/2 cups fresh cranberry juice
1/4 cup natural sweetener (e.g., honey or maple syrup)
1/2 cup fresh pomegranate seeds
1/2 cup fresh or frozen cranberries (optional, for texture)
Instructions
Combine pomegranate and cranberry juices in a saucepan.
Stir in unflavored gelatin packets until completely dissolved.
Remove from heat and add natural sweetener, mixing until fully incorporated.
Pour gelatin mixture into a glass dish or silicone mold.
Add pomegranate seeds and cranberries to the top of the mixture.
Refrigerate uncovered for 5 minutes to cool slightly, then cover and chill for 4 hours.
Slice into portions and serve.
Notes
For vegan version, use agar agar instead of animal-based gelatin.
Adjust sweetener to taste (e.g., use 2-3 tbsp of maple syrup for a milder flavor).
Let gelatin rest for 2-3 hours after chilling for firmer texture.
Store in an airtight container in the fridge for up to 5 days.
