- 1 can 13.5 oz full-fat coconut milk
- 2 medium sweet potatoes, peeled and diced into 1-inch cubes
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 large yellow onion, finely diced
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 can 15 oz chickpeas, drained and rinsed
- 1 cup low-sodium chicken broth
- 2 tablespoons fresh lime juice
- 1 teaspoon sea salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
- 1 whole scotch bonnet pepper, optional and removed before serving
Instructions
- Cut chicken breast into bite-sized chunks, removing any visible fat or connective tissue.
- Dice sweet potatoes into uniform 1-inch cubes.
- Slice bell peppers into similar-sized chunks and remove seeds and membranes.
- Finely mince the onion and garlic, keeping them separate.
- Grate fresh ginger using a microplane or box grater.
- Heat olive oil in a large heavy-bottomed pot over medium-high heat until shimmering.
- Add diced onions and cook for 4 to 5 minutes, stirring frequently, until translucent and slightly caramelized at the edges.
- Stir in minced garlic and grated ginger.
- Cook for 2 minutes until fragrant.
- Add curry powder, turmeric, and cumin.
- Stir constantly for 1 to 2 minutes to bloom the spices.
- Add chicken chunks and stir to coat each piece evenly with the spice mixture.
- Pour in chicken broth and scrape the bottom of the pot to release browned bits.
- Add diced sweet potatoes and make sure they are partially submerged.
- Bring the mixture to a gentle boil.
- Reduce heat to medium-low and partially cover with a lid.
- Simmer for 15 to 18 minutes, stirring occasionally, until the chicken is cooked through and sweet potatoes are fork-tender.
- Add bell peppers and drained chickpeas.
- Pour in the coconut milk and stir well to combine.
- Simmer uncovered for 8 to 10 minutes until the flavors meld and the sauce thickens slightly.
- Taste and adjust with salt and black pepper.
- Stir in fresh lime juice.
- Remove from heat and let rest for 5 minutes.
- Ladle into serving bowls and garnish with fresh chopped cilantro.
- Serve immediately over steamed rice, quinoa, or with warm flatbread.
Notes
Bloom the spices before adding liquid to create deeper flavor. Use full-fat coconut milk for the richest sauce, and add the lime juice at the end to brighten the warm Caribbean curry flavors.
