Instructions

  1. Trim the stem and tail ends from fresh green beans using a sharp knife, discarding any discolored or damaged pieces.
  2. Rinse the trimmed green beans under cold running water and pat them completely dry with paper towels.
  3. Drain and rinse the canned black-eyed peas in a colander, removing excess liquid and starchy coating.
  4. Halve the cherry tomatoes lengthwise and place them in a large mixing bowl.
  5. Dice the red onion into small, uniform pieces and add to the bowl with tomatoes.
  6. Chop fresh cilantro into fine pieces and set aside in a small dish.
  7. Fill a large pot with water and bring it to a rolling boil over high heat, adding a a pinch of salt.
