Ingredients
- 2 packets unflavored gelatin, about 14 grams
- 2 cups sugar-free juice, such as cranberry, orange, grape, or berry
- 1 cup filtered water
- 2 scoops vanilla protein powder, about 40 to 50 grams
- 2 to 3 tablespoons sugar-free sweetener, such as erythritol, monk fruit, or stevia
- 1 cup sugar-free light whipped topping
- 1 tablespoon fresh lemon juice
Instructions
- Combine 1 cup of sugar-free juice with 1 cup of water in a medium saucepan over medium heat.
- Stir occasionally until the mixture reaches about 160°F, just before boiling.
- Sprinkle the unflavored gelatin evenly over the hot juice mixture.
- Let the gelatin sit undisturbed for 30 seconds to bloom.
- Whisk the gelatin thoroughly into the hot liquid until no lumps remain.
- Pour in the remaining 1 cup of sugar-free juice.
- Stir well to combine.
- Remove the saucepan from heat.
- Let the mixture cool to room temperature for 15 to 20 minutes, stirring occasionally.
- Transfer the cooled gelatin mixture to a blender or food processor before it begins to set.
- Add the vanilla protein powder and sugar-free sweetener.
- Blend on medium speed for 45 seconds until completely smooth.
- Add the fresh lemon juice.
- Blend for 10 more seconds to brighten the flavor.
- Pour the gelatin mixture into serving glasses or a prepared baking dish.
- Divide evenly into 6 servings.
- Refrigerate uncovered for 4 to 6 hours, until fully set.
- Top each serving with 2 to 3 tablespoons of sugar-free whipped topping just before serving.
- Garnish with a small fresh berry or lemon slice if desired.
- Serve chilled immediately after topping.
Notes
Cool the gelatin mixture to room temperature before blending with protein powder to keep the texture smooth. Do not boil the gelatin, as high heat can damage the setting structure. Add whipped topping only before serving for the best texture.
