- 6–8 ice cubes
- 1–2 teaspoons honey or sweetener, optional

Instructions
- Fill a tall drinking glass with ice cubes, leaving about one-quarter of the glass empty.
- Squeeze fresh lemon juice into a small bowl and strain out any pulp or seeds.
- Measure 1/2 teaspoon of food-grade baking soda accurately.
- Pour the fresh lemon juice into the ice-filled glass.
- Add the baking soda directly to the lemon juice and let the fizzing reaction begin.
- Stir gently but quickly with a long spoon while the fizz is active.
- Pour cold filtered water into the glass until it is about three-quarters full.
- Add honey or your preferred sweetener if desired.
- Stir thoroughly to combine.
- Top with a small pinch of lemon zest if using.
- Taste and adjust lemon juice, water, or sweetness as needed.
- Serve immediately for the best fizz and freshest flavor.
Notes
Use fresh lemon juice for the brightest flavor and serve immediately because the natural carbonation fades quickly. Do not use baking powder instead of baking soda.
