Instructions

  1. Fill a tall drinking glass with ice cubes, leaving about one-quarter of the glass empty.
  2. Squeeze fresh lemon juice into a small bowl and strain out any pulp or seeds.
  3. Measure 1/2 teaspoon of food-grade baking soda accurately.
  4. Pour the fresh lemon juice into the ice-filled glass.
  5. Add the baking soda directly to the lemon juice and let the fizzing reaction begin.
  6. Stir gently but quickly with a long spoon while the fizz is active.
  7. Pour cold filtered water into the glass until it is about three-quarters full.
  8. Add honey or your preferred sweetener if desired.
  9. Stir thoroughly to combine.
  10. Top with a small pinch of lemon zest if using.
